This past March I had the pleasure to visit Vietnam.  We started in the capital of Hanoi and absolutely loved the French colonial architecture, food and friendly people.  We spent hours exploring the old quarter. We were taken around the city by tuk tuk to try some street food where we tried Banh Mi, Pho (of course) and other delicious food.  Our day trip to Ninh Binh is a day we will not forget.  It included climbing Hang Mua, a bicycle ride through a village and a paddleboat ride through the caves of Tam Coc.  After Hanoi we flew to Hoi An which was delightful.  The Old Town made us feel like we were in a storybook.  At night its multi colored paper lanterns are lit up, it looked like an ancient fairy tale.  We joined a cooking class which was so much fun.  First we were taken to a local market to purchase the ingredients then we were off to the chefs home where the cooking class takes place.  It was not only fun and educational but the food was delicious and we made new friends.  We ended our trip in Ho Chi Minh, also known as Saigon.  We enjoyed the energy, wet markets and of course the food.  My husband forced me to visit the War museum which is a no holds barred account of the war from the Vietnamese point of view. These 3 cities are so different from one another that I would not have changed a thing.
